Campfire cuisine: Gourmet mushroom swiss burgers
Cooking over a campfire doesn’t have to be as intimidating as it may seem.
The fire and glowing ashes below act basically as a rustic grill. So, with a few modifications, anything you can grill you can also cook over a campfire.
When it comes to grilling, many meats come to mind. Hotdogs, steaks and ribs, oh my!
But as great as any of those options can be, a well-cooked hamburger is hard to beat — especially when camping outdoors.
Taking cues from the mushroom swiss angus burgers that my wife and I both enjoyed quite a lot, we decided to try the gourmet burger option while camping.
We used two defrosted all-beef burger patties. The first was placed on a sheet of aluminum foil. Then we added swiss cheese, sliced fresh mushrooms and a dab of mayonnaise. The second burger patty went on top, and we sealed up the foil pack and cooked it over the fire. We learned that it was important to keep flipping the burger and that being so thick, it took extra time to cook through. Our first two tries ended extra crispy, but the last burger was just right. Patties stuffed with melted swiss, tender mushrooms and juicy from top to bottom.
